Apfelwodka-Soda Sous vide

Ingredients:
Apply vodka (Sous Vide):
350 ml vodka
150 ml Tío Pepe sherry
200 g sugar
100 ml water
10 g malic acid
4 g citric acid
150 g reinette apple or similar (diced)
Apple vodka soda
80 ml apple vodka
80 ml soda water
Ice cube
Glass: Highball
Method: Pour over ice, stir
Ice: Large ice cube
Preparation:
Apply vodka (Sous Vide):
Vacuum all the ingredients together and cook for 6 hours at 42 °C in the fusionchef Sous Vide water bath. Allow to cool and strain through a paper filter.
Before serving, store in a sealed bottle for at least 2 hours at -2 °C in the fridge or -4 °C in the freezer.
Apple vodka soda
Pour apple vodka and soda water over ice, stir and serve.
