Bush beans sous vide
500 g bush beans (cleaned 470 g)
1 pinch fleur de sel
1 pinch nutmeg
4 branches of savory
1 tbsp cold-pressed olive oil
Wash and clean the beans and blanch quickly in salted water. Then shock in ice water and drip-dry. Place next to each other in a sous vide bag and season with salt and nutmeg. Then drizzle with olive oil and vacuum with 100%.
Cook sous vide in the fusionchef sous vide water bath at 80 °C for 45 minutes. At the end of the cooking time, cool in ice water in store in a cool area. To serve, warm in the bag and toss briefly in a sauté pan.
